Shield Mouth

Except for the up-market, almost every type of restaurant these days has some form of customer self-service buffet or salad bar ready-to-eat. Even El Pollo Loco and other Mexican style restaurants allow you to select and fill from a choice of salsas. Asian-style all-you-can-eat Restaurants are another large with many appearing in most major cities. Then of course there are restaurants that focus entirely on buffets and salad bars.

The laws governing health and safety of these views have developed over the years to meet the character This unique type of establishment and some of the dangers or risks to consumers. Below are most of these requirements and recommendations of my own years experience of control and buffet restaurant salad bars:

– An obvious requirement is that all open and exposed, ready-to-eat Food must be protected so as to block a direct line between the mouth of the customer and the food on display. This shield is generally known as a sneeze guard screens broader food and is usually glass or transparent plastic, angled above the food enough to block possible contamination coming from the mouth of a client (by the saliva of sneezing, coughing, speaking, etc.). The shield may also take the form of a container with a tight fitting lid securely fastened, usually with hinges. If there is no evidence a shield or lid then the display is probably not approved and should be avoided.

– A utensil with a handle separate is required for each food displayed for self-service. No customer is allowed to touch food with their hands exposed.

– Must be cleaned plates and other tableware at or near the buffet or salad bar, and customers should be reminded, or notified in case of need, that only clean tableware is to be used when returning to the buffet.

– The proper temperature should be maintained. The food is usually displayed on ice (and actually be buried in ice), or the containers are sitting either in a refrigerated unit or warmer, or the food is sitting under a heating lamp. Watch for steam from the steam table or hot and even more food. Do not rely a heater to maintain long-term (more than 2 hours) of foods. You will usually see only warmers at a temporary buffet setting. This are large metal trays with shallow one or two canned gas lighted flames underneath, trying to keep food warm. They may be good for short periods of time only and are not trusted or definitely not approved for a more permanent buffet. Heat lamps usually fall into this same category. They are not the best way of maintaining hot holding temperatures for long periods of time.

– Employees should be continuously monitoring and maintaining the buffet or salad bar. They should do everything to restore to clean and check temperatures frequently.

– No sulfite or sulfate agents. Sulfites used to be a common preserving agent especially in fruits, maintaining a fresh appearance. Most if not all states prohibit any food facility from applying media Sulphating fruit and vegetables for consumption flood, or all potentially hazardous foods. Sulfites are still allowed on fruits and vegetables are not sold in its raw state, such as dried fruits and grapes used for wine.

– Absolutely no flies or other vermin (cockroaches, rodents) may be present. Unlike that you may have heard, there is no acceptable number or amount of vermin allowed in a food establishment. Vermin is strictly prohibited in all areas of the facility. They contain and can transmit dangerous microorganisms and general rubbish in your diet and should not be tolerated.

– No leakage and pooling of wastewater on the floor area, or melting ice or refrigeration or broadcaster.

– Most foods should be labeled with common name of the food, sauce, salad dressing, condiments, etc.

Learning requirements and potential hazards of a buffet or salad bar is just good consumer awareness and can give you the advantage to prevent a serious foodborne illness.
